She catches the eye slim with dreamy curves, darkly dressed complimented by earth-toned loosely falling ribbons. Gripping her firmly with one hand sliding finding her neck the other slowly pulling her upward she opens wet and her pale gold to yellow juice easily pours lightly, rhythmically dancing, ebbing and flowing revealing a subtle essence of ripe peach and flower petals against moist grass and wet stone, then she lunges spilling across your lips leisurely coating your mouth front to back with an orange essence her tannins gently grip, then she slowly slips on and away, "into the mystic..." and you wonder , will she come again...?
PS: particularly good with fresh whole slightly crispy sardines, cherry tomatoes and chilled organic cucumber all sprinkled with hot Hungarian paprika... — 9 years ago

This is the Beerenauslese. Had the Spat 76 as well and the difference is sticking alto ugh there is a similar profile and backbone. A very intriguing and mystic tea like nose, melted with quince jam, cinnamon and confit orange peel. A lifetime experience — 10 years ago

At Arugula with Ellen and Dominique. Learned: Sancerre is located on the left bank of the Loire River, in the Loire Valley, right in the center of France (some 125 miles from Paris). Overlooking the river, the vineyards of Sancerre are spread over 7200 acres of rolling hills, with perfect conditions for cultivating vines. The same chalk famous in the White Cliffs of Dover runs down through Champagne and Chablis into Sancerre, where it is cut through by a series of small valleys, each with their own microclimate and terroir. The two grape varieties used in Sancerre are Sauvignon Blanc and Pinot Noir. The white wines are fresh, fruity, and elegant, the roses are delicate and subtle, and the reds are perfumed and smooth.

The colour of golden saffron suspended in lightly heated cane-sugar water; a nose of candied blood-orange rind, apricot blossoms, dehydrated sweet white onions, German asparagus sautéed in unsalted butter, and sweaty dandelions; a gloriously ambivalent palette - it shuttles back and forth between a frantically ebullient acidity and a warming fur coat of alcohol and sweetness, with just a hint of sea salt at the very end. Preserved lemon creeps up through the white White Cliffs of Dover, where the rich white minerality seeps in and accompanies your two dozen oysters with gusto. If this smells like oyster shell because I told you it tastes like oyster shells? You’re right. You don’t? Ok we’re done. If you don’t like it? Great, you’ll save a whole bunch of money.
