you wake in the morning and look in the 'fridge. you see the missed remains, half a glass maybe, of now flat, Salon (20+). you say, "huh" and drink it straight. This is like that but opens with the added bonus of a bootsy collins bass line right through your nose. not for everyone. not for all the time. but if you get it you gonna know when ya want it again — 9 years ago
Perfect for pairing with meals, it's truly a subtle, warm, dry red. Thank you for the tip, my new favorite friend at Wilbur's in Fort Collins! Nailed it :D — 10 years ago
A beautiful wine from a historic vineyard site located in the RRV. Cherry blossoms, strawberries and pretty baking spice notes color a mid-weight palate framed w/velvety tannins and nice balance of acid. Also of note aromatically seems to be the presence of some new American oak. A whole lotta life left in this wine. Would love to find another one of these. — 11 years ago

Great value! @Ann Collins you should grab a bottle for Jim — 11 years ago

Thank you Tim Collins. Great bottle. — 12 years ago
Just enough sour (almost cider esque) from wine barrel aging. Very complex with funky, straw like nuances. A contemplative beer brewed in Salt Lake City by Epic and aged accordingly with a collaboration from Crooked Stave in Fort Collins. — 12 years ago
Bacon, olives, herbs, rich black fruit and black pepper. Full and mouth coating. Amazing. — 13 years ago
A very nice and pleasant brew, nice hops and spice, CO is on the map for sure, with many fine brews — 13 years ago
Distinctive red fruits and slightly earthy. This rosé has presence. The first wine of a long evening at Italic, a superb modern Italian restaurant from the group behind Easy Tiger with an excellent wine program led by Craig Collins MS. — 9 years ago
Bootsy Collins bringing the Funkadelic. Admittedly I was nervous about showcasing this wine to my friends after many nights praising their Chenin Blanc. This is a most interesting wine. Dark berries but rolling in on a muddy tire. One poster said it was better the next day. I agree. This was one of the most unique wines of the year (2016) for me. So the future looks bright. — 9 years ago
I first discovered New Belgium brewing Company on a trip to fort Collins in 1998. I'm happy to say that their unprecedented success hasn't screwed up their beers like some other small batch Brewers gone bad. Super dee duper small batch feel Imperial IPA with peachy taste. Best entry level IPA for sissies who normally drink garbage like Bud or Miller. — 10 years ago
In magnum, bit of funk. More Bernard Edwards than Bootsy Collins. Very drinkable. Smoke & blackberry. — 11 years ago

Delicious,, lovely acid little bit of meursault mealiness and gorgeous length. Tastes like a great barrel aged Tom Collins — 10 years ago
By Neil Collins. Red licorice moves to rich dark fruit finish. Need more of this. — 11 years ago
12th anniversary dinner at Rare in Fort Collins CO. First time trying this one. Love it! Light and perfect for appetizers — 12 years ago
Miraval at Arro!!! Thank you mr. Collins — 12 years ago
Rich and intense. — 12 years ago
Funky, but in a good way...the Bootsy Collins of the Languedoc. Marianas Trench-deep, flashing complexity and depth rivaling a Jackson Pollack painting. Fantastic wine, particularly with tonight's beef goulash. Not a wine for the faint of heart or for people who need a squeaky clean wine experience, this is great on its own terms. — 13 years ago
Enjoyed this with David Collins at Tilikum Place Cafe on 9/1. Can't beat old Nebbiolo. — 13 years ago
Dan Ponce
