• Style: Junmai Ginjo, typically polished to around 55–60%.
• Profile: Known for a softer, slightly sweeter palate compared to drier Shiga sakes. Often shows melon, apple, and rice sweetness balanced by a clean, light acidity. Good but a bit too sweet for me. Everyone else’s favorite. — a month ago

Kido Winery Verdelet 2018 (Seibel 9110) Pale lemon with touch of grey or pink colour. Beautiful citrus and stone fruit aromas with wet stones. The weather might have struggled Akito with less sunlight hours, but as a result may have led to this elegant structure. Pure joy to taste this under 2,000JPY bottle. — 6 years ago
