Opened 3 hours earlier, finally saying something: coffee shop, incense, dry mushroom, black truffle. Oregano, thyme, mint. Paprika, little smoky, meaty and irony. Sweetness that surrounds everything. Balsamic. Starts soft and follows fresh filling up your mouth. Aromatic herbs keep coming back. Iron again. Only slightly warm when it goes down. Chinotto too. — 8 years ago

Notes on the 1995. Had it February 2009, along with Poggio Di Sotto 95 Riserva and it was obscured, but it was a great wine anyway.

2001 Paul Chapelle Santenay "Graviéres" 1er Cru - Well balanced and holding up nicely. Irony mineral, flinty red cherry, orange peel, hay and mushroom, with medium acid and med(-) tannins. Did well with shitake mushrooms sautéed in goat butter and sweet vermouth served over the Osso Bucco. Enjoyed over a 4 hour period with hard salami and Calabrese as well and it never lost its integrity or tried to close up. Drink now and enjoy. — 8 years ago

This was classic with ripe red cherry, rose, and irony earth. With several hours' air some tar started to emerge, so this is quite tightly wound, even if enjoyable for those who like tannic wines. Palate is lithe and fresh, very smoky with plenty of earth and leather, irony, medium concentration and length.
