On the nose, strawberries, cherries, black cherries, blood oranges, soft, unstated chalkiness, volcanic minerals and fresh red & pink roses. On the palate, its delicate, fruit driven. More fruit concentration that the Billecart-Salmon but less than the Ruinart Rosés. Strawberries, cherries, black cherries, blood oranges, tangerines, nice chalkiness, round acidity, brioche & pink roses. It's much more floral than the Billecart or the Ruinart. However, the finish is not quite as long as the other two as well. But, it's still very nice. A little history on the house. Laurent-Perrier was founded in 1812 and is the main company of the Laurent-Perrier Group, whose other properties include; Salon, De Castellane and Delamotte & Chateau Malakoff. Laurent-Perrier was founded in 1812 when a former cooper and bottler, Alphonse Pierlot purchased two parcels of land named "Plaisances" and "La Tour Glorieux" in Tours-sur-Marne. When Pierlot passed he willed the company to his cellar master, Eugene Laurent, who ran it with his wife, Mathilde Emilie Perrier. In 1925 Veuve Mathilde died, and left the company to Eugenie Hortense Laurent. Eugenie sold the company to Mary-Louise Lanson de Nonancourt in 1939. In 1949 Bernard de Nonancourt became the owner of the company and saw it become one of the largest family-owned Champagne houses. The de Nonancourt family still retains majority ownership today. Sublime. Silky, elegant, with incredible purity and concentration of fruit. Raspberries, strawberries, dark cherries. A good percentage of whole cluster fermentation, which really magnifies the fruit with the semi-carbonic maceration. Oak was well integrated, with lively acid. Once the ripe tannins had softened after an hour's air, a hint of chocolate and a subtle coffee note came through in the long, long finish. — 10 years ago
Slight floral quality to the edgy sweetness and gorgeous black fruit. I suspect some co-fermentation here (Viognier). Lovely, lively, and lithe on the palate. Plenty of acids here, so this will pair with nearly any meats. Just to reiterate, this is not your typical Paso syrah (no offense), but an elegant rendition of the grape. — 10 years ago

New appellation created in 2012, upgraded from Cotes du Rhone. Assemblage made of Viognier, Marsanne, Rousanne, Grenache Blanc. Bits of chardonnay-like banana on the nose, next to licorice. Firm acidity, spicy finish. — 10 years ago

Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.
The La Parde is fresh, bright, ripe, dark fruit & easy to drink young. The La Parde will be renamed as Haut-Bailly II with the release of the 2018 vintage. They are also releasing a third wine Haut-Bailly III and a Rosé wine beginning with their 2019 vintage.
Served with Gnocchi a la Parisienne. The best Gnocchi we’ve had outside of Italy @Mathilde French Bistro
Wine will improve 2-3 points with 7-10 more years in bottle.
