Beguiling. This evolved after a few days, as it should. At first, this had the nose of Irish whiskey and/or Calvados, the dry palate of an Amontillado, the sweet, dried fruit flavours of a Barsac or late harvested Pacherenc du Vic Bilh. Baked apple & cider, butterscotch, yeast, cacao nose. Lively effervescence, caramel, brioche, medium acid, and nice underripe apple. This wine definitely has a chunky / chewy texture that explodes ok the palate. Sweet raisinated quality that delivers an oxidative sweetness, with a flash of light baking spice. Delightfully floral on the palate: elderflower / gardenia - sweet, fresh, white flowers.
