Very fine mousse but it disappears really quickly.
Strawberries and cream on the nose very vividly. Sweet whipped cream is almost turning into condensed milk. Raspberry, very ripe peach, coissant woth strawberry jam. All sorts of strawberry associations really :)
On the palette mousse slowly fills the mouth, pretty dry on the finish. Brioche, pear, red apple, confiture.

After 2 years of storage, I’m trying this again on a gorgeous 65-degree Sunday. Still tasty, but more raisin on the nose and the acidity is definitely fading. Smooth and mellow at this point, but might be nearing the end of its drinking window. — 3 months ago
