Smells of rocks, Meyer lemon, white flowers. You can taste the minerals, Meyer lemon, melon and hints of apricot. Really good acidity is making my mouth salivate. Refreshing. Paired well with a grilled king salmon with arugula and white been salad with lemon and pine nuts. Yum! — 6 years ago

On Saturday night I was about to order a Vermentino but our server convinced me to try the Soave Classico, I was skeptical. He brought over a taste of both and didn't tell me which was which. Ugh. An impromptu blind tasting in front of my dinner companions.
Of course, I was set up and walked right into it. I ID'd the Soave as the Vermentino. That was the whole point. This Soave is not a thin, generic one trick fruit bomb. It's surpassingly complex with medium high acid, lemon, peach, apricot, and wet stones with a bit of salinity. Paired perfectly with white pizza and arugula salad. — 10 years ago

Post-show bev. Goes down easy. It’s that hint o’ green that keeps it flowing. Not too tannic, not too much of anything—which is to say there is enough. Totally pleasant. It’s like watching Sesame Street as an adult. Won’t challenge your brain but will be pleasant and give you, if not the warm fuzzies then at least a bit of alcohol-induced warmth. If I needed four glasses at a Seder I could. Oh wait you wanted real notes? If you didn’t stop reading now.

Eye: medium ruby, thick tears Nose: cherries, huckleberries, a hint of asphalt and a lick of arugula. Palate: dry, medium acid, medium minus tannins, high abv, medium body and flavor intensity, cherry cordial, blueberry pancakes (no maple but vanilla tinged, green pepper, green...apple?
