Amontillado characteristics:
Aged first under flor as a fino or manzanilla, then fortified to 17% to kill off the yeast and allow oxidation. Balances tension of lean texture with oxidation's complex, heady aromas.
What makes it special?
A model bodega focusing on small production, high-quality wines dedicated to tradition, this wine is first aged for 8 years under flor, then another 12 in the solera system. It is not for slugging back - this is an intense, intellectual, wine-geek's wine.

N: Smells like old boats at dock. Wood varnish,maple, nail polish, oats, salinity,
Caramel, burnished mahogany.
P: Oranges, multi layered nuts, a bite, some much petrol, oily. Years.

This Is the older (antique) amontillado from this old, tiny sherry maker in Jerez. Visited it today on a tiny side street in the northwest of the city Jerez today before lunch....

This sherry has been the perfect nightcap the past few nights. Earthy, dense. Lots of mushroom.
