A Southern 🌍🌏🌎 Hemisphere wine theme for a small dinner with a dear friend. Some older bottles from our cellar and some younger bottles from another cellar. Paired this evening with Asian-style braised beef short ribs (Kinderhook Farm; Valatie, NY) and grilled polenta.

Good classic Champagne taste. Pear and a bit of toast. Lots of fine bubbles. A bit foamy for my taste but well made and re freshingly crisp.

Dec 10th, 2016Ljust citrongul färg. Små fina bubblor. Nästan helt klart men viss grumlighet. Stor doft av röda äpplen, bivax. Krämig textur med fin mineralitet. Röda äpplen och lite havre i smaken. Riktigt gott!
