Both mineral and powerful, elegant and deep, floral and spicy. My mind goes back and forth while drinking this. It's light and pure but also a little tannic. Great wine. Sulphur is only used (a little) during bottling when the wine is in need for it. Natural winemaking without dogma's. Philippe Pacalet was trained by Jules Chauvet (the father of the natural wine movement and compatriot of his oncle Marcel Lapiere) and later at Domaine Prieuré-Roch.
