Yet another fabulous grower Champagne, Paul Dethune's Cuvée À I'Ancienne Grand Cru Champagne Brut is gorgeous! I love the acidity in this wine, it provides not only focus, but also superb lift, and despite it being an Extra Brut, it manages to come across as totally fresh and vibrant. There is too, marked purity and sappiness on the palate, and it finishes with mouthwatering, complex notes of toasted hazelnut, bread dough, peach, d'Anjou pear, and wet stone.
