Cool how 8 years takes a good Chablis and makes it something else altogether (and for me profound). Sharp edges and tangy citrus have faded in favour of musky citrus and tropical fruit, an almost smoky resin and a long finish loaded with minerals. ❤️

2012 Vintage. 12.5% Alcohol. Wow, Lemon and lemon zest with minerality and good acid for plenty of verve. Loved it.

This zesty newborn is going to age quite well, methinks. Amazing structure and slight vulnerability. Ruled with lamb, fig salad, spanakopita, and gruyeres!
