L'Aventure
Optimus Estate Paso Robles Red Blend

My favorite Paso winery. One of the OG Rhône Rangers coming over from France in the 1970s. This is his entry level wine and even it is sublime. 2011 vintage and still going strong. 50% Syrah, 33% Cab, 17% Petit Verdot. ABV 15.1%.

Extended decanting recommended. Paso wine? Certainly kills any paso I know.

Couldn’t tell if it was a Syrah or a Cab..turns out it’s a blend of both!

Perfect Christmas Eve accompaniment to medium rare beef tenderloin. Dark, rich smoky goodness with depth and weight enough to cut through the beef and port reduction gravy. Been following and buying Stephan’s wines for 20 years and never once been disappointed. The blend of mostly cab and Syrah brings out the best of both grapes.
