Jean François Ganevat
Les Chalasses Marnes Bleues Côtes du Jura Savagnin
En-magnum. Elevated to another level with the cheese board and notably the only white that could really keep up with the Rieslings during the night. The flavours of salted almonds, beeswax, hay, and light smokiness just went so well with the Comté. Mama mia! The wine was complex, very straight, yet dense and had a lovely textural richness. Lots of citrus and minerals, as well as spicy nuances to complete the notes. Even more mineral on day two.
NB: SC firmly believes this and the Les Vignes de Mon Père are Ganevat's best cuvees and perhaps the two greatest sources of Savagnin anywhere.

Very tight and needed a good decanting. Very high acidity with nice lime and mineral notes. A little agressive right now and needs a few years to mellow down. Looks like it will be a lighter version than usual.
