I maybe waited too long. Some crystals at bottom. I let it air out a bit but it was really clean and crisp. From melon de Bourgogne grape and maybe that grape name played tricks on my mind but I tasted some hints of melon actually. That was the most obvious hint. It tastes different straight out of refrigerator than it does 30 minutes later once it warms up a bit.

7-years is a charm! Lemon, lees, crushed sea shells, and bursting with minerality.
