Dec 5th, 2020Stunning wine! Dark red and already evolving to the dark orange. Needs a little rest before tasting it though... great nose moment with redberries, mint, leather, strawberry and oak. Brave tannins with decent acidity, again berries pops up in mouth, little touch of spices and oak as well as a pinch of pepper. Powerful Barolo with great balance and mid end in mouth.

Pajana is a single vineyard Barolo, rustic and tight at the beginning it opened up nicely after 24 hs. It lingers for a very long time and has all the great nebbiolo characteristics but If you are looking for a more modern - early approachable Barolo this is not your wine. A very interesting learning experience for anyone who is getting into the unique flavors of traditional Barolo

1999. Black tea and balsamic strawberry. Super luscious. Tongue-coating. Aroma is like an old baseball glove. Incredibly savory. $95 from Hart Davis Hart, Chicago. Had with dinner at EL Ideas.
