Wine Essentials: Classic World Wine Tour @iceculinary

Institute of Culinary Education wine tasting class.

Pinot Noir

Earthy smell. Wet outdoors. Black cherry. Tart cherry.

Acidity.

Try with roasted white meats, pinnolis, mushrooms.

Really nice, earthy but still youthful wine, great with the rare beef dish at La Buissonniere, doesn't seem to be listed on here but quite good.

Continuing on with my burgundy wine area deep dive while making my way through the French Wine Society's master class. Today's class was focused on terroir, as the soils change as you move through the C么te d'Or region. Fixin is towards the north side of the region and this premiere cru was grown up the slope from later Jurassic soils.
