A Burgundy bin end theme for my bottles tonight, all are the last stock of the wines that have given us great pleasure in the prior 12-18mo. They will be missed, but not forgotten, new vintages will come eventually. 🤩

A Burgundy bin end theme for my bottles tonight, all are the last stock of the wines that have given us great pleasure in the prior 12-18mo. They will be missed, but not forgotten, new vintages will come eventually. 🤩

The evening theme is Pinot Noir from unexpected areas.
A red Chablis, sourced from three parcels between Venoy and Chablis; one location is the Ferme de Couverte which is the hill above Vaudésir. 🦄 🍷
Nose has syrupy kirsch, very ripe cherry, very ripe black currant and moist limestone. Incredibly fruity, reminiscent of many Oregon wines, on the edge of being too much fruit. 🍒💣(Can't believe I'm writing that!)
Palate has super sweet ripe cherry, brambly-stemmy notes are well integrated, acidity is sharp but soft edges.
I'm completely caught off guard by this bottle. Yet, I should have known that the Chardonnay masters in Chablis would have just done an amazing job with Pinot Noir grown in the same conditions. Damn it, I barely bought any of this and that was my mistake, plus 2016! What was I thinking? Won't under commit to this wine in the future, perfect sipper and very accessible.
Decanted ~3hrs.

What it is is not fancy. But this is the best of what it is. Bright cherry fruit. On fire acidity. Very grapy. From Chablis. A must own even though it’s Bourgogne rouge. Bought from Fass Selections.
