Sparkling wine. Pale yellow, very good clarity. Excellent carbonation, pinpoint bubbles. Yeasty nose. Yeasty and malic flavors, toasty graham cracker finish, good crisp acidity throughout. Fairly dry. An interesting alternative to other sparklers out there. Methode champenoise, Oregon grapes. The Melon grapes are largely neutral here, so it’s all about the aging on the yeast. An artisanal take
