Visible residual crystals dancing on the bottom. Only a thirty minute decant, followed by cork replacement and a further thirty on ice. For me, the acidity is lacking 15 years on. It has lovely apricot and honey that are on full display, but that’s most of the story. I like my Sauternes/Barsac to be a little more business and only slightly casual; it’s not all flip-flops and Hawaiian shirts. When in perfect balance, the acidity and sweetness cause a great battle to commence. On the one hand, the lingering sweetness and texture should invite you to immediately revisit another sip. But you pause. And you do that only because you have a fear that, if you sip it too fast, a ripping acidity damage your tastebuds. That’s a dessert wine.
