Interesting to hear about Cantillon's microbial emphasis, all fermentation from brettanomyces and bacteria. Tart, earthy, lovely bitterness on finish.

Always impressed when drinking cantillon in Europe while its fresh. The mouthfeel is creamier; the fruit more balanced.

Fresh (?!!?) for cantillon. Every cantillon I've tasted in the states has been much more sour and way less creamy. So balanced. Masterful beer.
