Tasted blind. Dark reddish tawny. Mostly translucent. Amazing nose. Powerful. A spectrum of notes including red fruit, cola, pencil lead, black truffles, coffee, blood sausage and some dry dark soil. Animalistic. Massive fruit and structure with a long finish. Someone says "honey ham" as a note in the nose and we all agree (first ever note involving the word "ham"). We really wanted to love this, but alas, we think that around 2012 was when Caymus decided to focus on an à la carte presentation, which makes for quite a shallow encounter.
They have tapped into the logic of the Skinner box operant conditioning. We humanoids press a lever (in this case pull a cork), and a one-night-stand promptly arrives in our glass. Us peeps tend to follow the crowd (I present myself as exhibit A), but when you taste this, it makes a splash, but flatters to deceive.

This wine has a wonderful nose. Dark cherry, tobacco and a touch of chocolate were the highlights. The first sip after opening was great. Allowed to sit for a little over an hour and we were rewarded with a luscious glass of wine. The blackberries to me were the most prevalent but there are subtle red fruits as well. Finished lingered with a touch of Graphite and wet cedar. This was a lovely bottle of wine. — 7 years ago
07' Ornellaia Bolgheri ( Bordeaux blend). Predominately Cabernet. I'm also guessing it's mostly all new oak. Slightly tannic & a little heavy on the oak. That absolutely subsides with a decent decanting . Must decant, so the fruit can move forward in the wine. Layers of elegant & beautiful black fruit, with hints of tobacco & dark chocolate. It just lays on the back of your palate for 30+ seconds. A little more patience/time?? I would love to try this again in 3-5 years. Recommend highly!

We had the 2014 Vintage on 12/18/22. This is a fantastic wine from Quintessa. The winery produces consistently excellent wine. Tastes of blackberry, black cherry and oak. Fruit forward and well balanced. A winner. — 3 years ago
Seemed like the right time to open this. The candy like flavor that I see people complain about had blown off this wine and it just had this incredible purple inky color and rim to it. Very enjoyable. Still had good fruit and sweetness without losing too much luster. Caymus used to age forever but I would drink these up by 10th bday. — 4 years ago

It was a labor of love. Results won’t be released for several months, but, hey, we poured ourselves into this prep and so wine not celebrate the milestone of getting ‘er done!

When we open from 1987, we expect everything. One thinks of its conservation in cellar, the risk that it is passed or incredible, with the tannins having evolved in this vial ... The cork pulled-out, in perfect state and one knows in advance that one hit the jackpot and that it will be phenomenal. A coppery robe, a complex nose with aromas of black and floral fruits. In the mouth, an explosion of flavors that take the length and makes us go back in time. A very large estate for an incredible wine, to fall 😍🍷 — 7 years ago

What a joy to find this bottle at a NYC steakhouse. It’s been a while. Initially turned on by these ancient Lebanese vineyards and organic practices. And blending fruit that we are Las Jaras use. Drinking well for being a ‘16. VA a bit high but reminiscent of some wilder Barolo — 2 years ago

Notes from +24H open:
Nose has ripe cherry, dried cherry, dried blackberry, red velvet cake, ripe plum and dry, mineral-ly earth.
Palate has silky-sweet cherry, ripe red currant, (light) cigar wrapper, dried cherry, faint eucalyptus, faint wood notes, dry earth, faint iron notes on the long finish. Mild tannins persist today. Expect to enjoy this vintage another +10Y when held in proper storage.
This bottle was singing at the top of its register last night, slightly diminished today. Absolutely perfect cork, no Durand required for extraction. Acquired a mere two years ago, from a local retailer beginning to close down his shop. He purchased a case on release, stored in his cold cellar; when I got to hunting it only a single bottle remained.
I've had the 2000 vintage before, and it was a treat in a more youthful stage, but a delicacy with our meal last night. We baked a 3lb beef tenderloin (Kinderhook Farm; Valatie, NY) coated in an herb paste then an herbed panko crumb crust with parmesan. About a 50m cook, 30m rest yeilded a perfect 130° center. Served alongside smashed potatoes and roasted brussel sprouts with thick cut bacon. We had fantastic company, connecting again with a wine trade friend and his wife after a few years break in our dining schedules. — 4 years ago

Note : Opening of this Magnum 2002 that had not moved from its individual wooden case in special. Always so many emotions to take out such a wine and please the family. Perfect time to open it and we are on a silky red robe blood with shards garnet. The typical nose of Sassicaia with flavors of black fruits, pepper, copper and cigar. Once in the mouth, the aromas explode and the final is long, greedy, structured and elegant. Excellent.

Ouverture de ce Magnum 2002 qui n’avait pas bougé de sa caisse individuelle en bois. Toujours autant d’émotions à sortir un tel vin et faire plaisir la famille. Moment parfait pour l’ouvrir et nous sommes sur une robe soyeuse rouge sang avec des éclats grenats. Le nez typique du Sassicaia avec des saveurs de fruits noirs, poivre, cuivre et cigar. Une fois en bouche, les arômes explosent et le final est long, gourmand, structuré et élégant. Excellent.

Absolutely Awesome! My daughter just passed the Bar exam and we picked a marvelous wine to celebrate! Soft tannins, great minerality with mid pallet lingering aftertaste. Still has red fruit taste with hints of tobacco. Cellaring is well worth it. — 2 years ago
