This 2015 Sauvignon Blanc is pale straw in color, clear, and crisp. It possesses a trifecta of qualities – herbal, herbaceous, and citrusy – accompanied by tropical nuance. I’m particularly fond of the tangy grapefruit and lime coupled with melon and passionfruit. This wine is very young, very green, with regard to herbaceousness and fruit, and I mean that in a good way. By the way, Villa Maria, you had me at zesty acidity. I could drink this all day. Ayala Perle D'Ayala Brut Millèsime 2002 is an elegant blend of 80% Chardonnay and 20% Pinot Noir from the Grand Cru regions of Le Mesnil-Sur-Oger, Chouilly and Cramant. It's been aged on the lees for eight years, giving it nice balance and weight against a tensile acid spine. Golden delicious apple, lemon zest and shortbread form that wonderful trifecta of aromas that is not unlike a freshly-baked apple pie.
