Slow O for 10 hrs. Pretty Cabernet nose and delicate, elegant palate. Nice balance but feels really light. Almost no tannin. Not what I expect in a Kap GV. Vintage specific, I suppose, but the 2011 Roberta’s from last night had much more tannin. Very food friendly wine. — 8 years ago
What a beautifully graceful wine! A bit muted on the nose (slow ox for three hours - perhaps I should have decanted) but one of the most amazingly expressive palates I have experienced for a very long time. All the elements in perfect equilibrium; one of the rare times that I would actually apply the term 'smooth' to a wine. Tannins still lightly peppery, poised acidity, and an insanely long velvety finish that kept revealing hidden layers of complexity. Like a Burgundian peacock's tail that keeps expanding, adding new layers of graceful shades and patterns to the rolling tapestry of flavour. — 9 years ago
Wow, absolute delight. High acidity, a touch volatile which is house style. Burgundian, sweet Brunello nose, amazingly long finish and deeply complex. Still very young, slow o for 3 hours then decanted one hour. Best Sangiovese there is. Brunello Riserva — 10 years ago
Loamy earth, dusty cherries with mushrooms, spiced tobacco, underripe strawberries, smoked wood and cassis. That was just the nose. Palate is a little more unforgiving with more wood, tobacco and spice wrapped in acid and tannins. 8h slow ox and 2h decant and this barely unfurled by last glass. Dark fruit balanced through old oak showing light spice on the nose encouraging thought to nail a specific note but is remaining a bit of an enigma in my rock rattled head after a good day enhanced by 75 MPH Harley induced wind and the brilliance of Bose and an iPhone. Ok, back to the wine, it touches, lightly grabs spreading its dark berry mini-burst in a layered earth touched tannin slow ride making magic with some of Chapel Hill's Bin 54's straight up amazing goodness (in this case very rare filet mignon, garlic tinged green beans and almond slivers; my go to steak spot in NC). Half-bottle. The wine was medium amber in colour and offered orange peel, apple, honeycomb, caramel, smoke, spices, sherry and a mouldy note on the nose. On the palate the wine showed orange, peach, apple, cane sugar, caramel, smoke, spices, creamy honey, some coffee, a hint of chocolate, sherry, mild black tea and a mouldy note, paired with medium-plus acidity, a creamy honey mouthfeel and very good length. Judged by this half-bottle the wine has just passed its plateau and started its slow journey on the downward slope. A good, medium-bodied Sauternes with lots of botrytis character. One of the hottest restaurants in town, Saturday night, the week before Cara's birthday: all the makings of a delightful date night.
Rarely is chicken king but at Le Coq Rico that's very much the case. Antoine Westermann apparently spent years trying to find the perfect chicken before he was comfortable opening the New York outpost of his famed Parisian poultry eatery. The Brune Landaise is indeed a beautiful bird, heavy on the white meat yet utterly succulent and flavorful. Anyone eating at Le Coq Rico should also try the extraordinary slow cooked eggs to start and end with I'ile Flottante, a perfectly spherical soft meringue floating in a sea of rich crème anglaise. Indulgent and divine.
I brought a 1994 L'Eglise Clinet, which I picked up a few years ago. Apparently this wine is considered a standout in an otherwise difficult vintage. Supple and right at its peak, this medium bodied Bordeaux has hints of cherry and tar that evolves beautifully on the palate. (Corkage is $50 per 750ml, max two per table.) — 9 years ago

The cork is perfect. The color is opaque. The legs are thick, long, and slow to flow. The bouquet is English lavender and honey. The initial palate is amazing!!!!! WOW! Im so impressed! Black cherry and cranberry bliss. There is a red pepper , spicy tang that I absolutely love! I so want to share this with someone so bad. There is butter, coffee, , and clove. There is black currant and oak. The finish is not that dry and leaves a desire for more!!!!! I dare you to try to have just one glass because I have just had two glasses and I am aching for three ! Tonight we are drinking Machete 2014 California red wine bottled by Orin Swift Cellars. The one with the naked lady on the front of the bottle standing beside her car with the door open. Hummmmm. Well the cork was well preserved. The color is dark and the legs are long and slow. The bouquet is blackberry cobbler. The initial palate is slamming with sweet black currant - whatever that is so Im guessing because I have never tasted a currant. However, I just ordered the juice! The flavor is blackberry and cherry! The finish is very dry with a short ending of vanilla and a tart cherry pie. Simply Devine! I want another sip! It is sweet but very dry! Slow O for 6 hr prior to drinking. This really great. Seems perfectly proportioned to my tastes. Not too sweet. Great frame. Not hot. Seems a bit more open than previous Greer bottlings I have had. Likely from the blend of the two clones previously split for the Pott Arsenal and Greer, but maybe vintage, too. Whatever the case, I like it. — 8 years ago

I snuck aboard the space station and made my way to the holding cell where I was told the princess was being held. Upon breaking down the door, I was confronted by a short person in a diaper and odd headdress who said "I'm sorry, but the princess is in another death star".
About that time all the alarms in the space station started going off.
After some brief firefights I found myself cornered, my only escape to done down a shoot into a garbage compactor. So I did. Once in the trash compactor I met a friendly monster called a Dianoga. We shared a lovely bottle of Slow Press while the walls of the compactor slowly closed in on us.
Fortunately for me, I'm the hero of this tale and, as such, made a timely escape, rescued the princess (eventually), and managed to do it all without realizing I had spilled wine on myself. — 9 years ago

This is Honig 2013 cabernet sauvignon from Napa. Amazing!!!!!!!!!!!!!!!! The color is pitch black midnight purple. The legs are thick and slow. The bouquet is black raspberry pie. The initial bouquet is blackberry, black current, and pepper. The finish is long with a dry oak and earth tone. I am loving this. Then out of nowhere comes a blast of cranberry and Good Allah! Ex-Chateau bottle. Testament to perfect storage. Light Amber edge with a darker core. Started off full of toast and just a whiff of brett. Slow ox for 2 hrs then poured. Amazing life for a 54yr old wine still in its stride. Light and dark fruit with seamless integrity and polish. Classic old BDX. After the initial funk blew off it kept developing in the glass. Crazy good paired with dipping into gamba al ajillo (emphasis added), at Napa's groovy/real Zuzu, catching a classic deeply dirty nose while still sporting sun-drenched fruit that initially reworks one's first blush front mouth with an iodine edge that morfs into red and black fruit edgy with acid/tannin slow dancing to the depths and begging for another pinch of broth soaked chewy freshly baked bread and the associated next swig of this sweet juice...rhythmically stellar by day or by night😎🌌👣🍷🌀🎼
