Pulled from the wine fridge and double-decanted about 90 minutes prior to service; enjoyed over the course of three hours. The 2005 Bougros pours a deep straw color with medium viscosity. On the nose, the wine is vinous with notes of marmalade, dried apricot, cashews, chalky minerals, leesy, and slightly sherried. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is long and super chalky.

This improved dramatically as it came up to temperature and had some real time to stretch its legs. It showed all the hallmarks of well aged GC Chablis from a solar year: powerful, dried fruit; the chalk; the acid; its creamy, leesy texture. The sherried, oxidative notes seemed to dissipate over time, freshening up a bit after being cooped up for so long. Bravo! Drink now and before 2030. Thanks Andy! — 10 months ago

Wow! Still bright, chalky, and full of youthful grip. Red plum, raspberry, lichee and white pepper notes are most dominant. This could easily go another few years and not be at its peak. — 5 years ago

This wine is in a GOOD spot right now. CT Average of about 93, and I'd say that this is about right. 93-95 as this one still has probably 7-8 years before it is pop and pour. Acidic at the opening, but the patience (which we didn't have) would have served us well. Cabernet power from the front. Blackberry preserves, hint of mint, white pepper, hint of clove, middle that goes a little bit herbal, but still very considerable black fruit. Finishes strong, with pepper, spice. I know the last 750 I have is in danger, and hopefully I can also lay off the mag for at least a couple of years. — 7 years ago

Currently about 5 hours east of Melbourne in east Gippsland tasting this brilliant William Downie Pinot Noir. See several previous Delectable notes from earlier vintages. This wine manages to combine light to medium weight with medium plus intensity. Red fruited with Sous Bois. Downie is a gifted winemaker working in an excellent terroir for Pinot Noir. 2012 vintage. Wow...now this is a serious wine. Deep in dark fruit and terrior flavors and a fair share of tannins. This was pure heaven with a barbequed rib eye steak. Another of those wines that I keep on the shelf because they are bound to be wonderful when opened but I want to keep them as long as possible for slight aging. But I never buy enough soon enough before the sell out. Mark Ryan makes seriously wonderful wines and this is surely one of them. — 9 years ago
