Did not expect a basic chablis to be so full-bodied yet balanced. It was a perfect match for roasted chicken with a tarragon mustard slurry. Purchase for $25 in March 2022. — 5 months ago

Forgot to take detailed notes, but this was nice. Not really any carbonic / natural / “new agey”notes, just a solid classically made gamay. Definitely has some structure, opened 4 hours before serving which was good. Didn’t sing on any one dimension of fruit / earth / acid / length / texture but was nice overall. — 7 months ago
Light shimmering gold in the glass with a plethora of small, profuse bubbles. Primarily Pinot Noir and that’s clearly evident on the nose. Peaches and plums with a strong infusion of dried strawberries and red cherries. Apples aplenty with cinnamon rolls and toasted nuts.
One of the more esteemed growers, Paul Bara produces nothing but exemplary champagnes including this entry level bottle. Unmistakably Bouzy, their wines always represent the terroir and terrain so very clearly. 80/20 PN/CH with a dosage of 7 g/l and disgorged in September of 2020. The kicker here is the 50% of reserve wines they use for the final blend. Just astonishing and makes a huge difference.
The acidity here is tight with a bit of zip but mellows out over time given air. Nice harmony and balance, as usual. Apples and cherries dominant on the tongue. Creaminess abounds with medium spice and hazelnut. Amongst entry level grower champagnes, there just aren’t many better than this. Always an instant buy. — 4 years ago

This was the 2011 PH Beckstoffer Tokalon. Superbly constructed. Layers of fruit and subtle tannins. Approachable but deep and distinct. I can't wait for the opportunity to taste this again. Highly recommended purebred California Cab. — 11 years ago

Wine is from Pisoni Vineyard in Santa Lucia Highlands. Cherry, blackberry and red plum fruit, with baking spices, caramel and violets. — 7 months ago
Nose has moist brioche, browning yellow apple peel, honey, dried lemon zest, green herbs and seashells.
Palate has bruised yellow apple, lemon peel, nectarine, green apple peel, faint tangerine with great acidity and fleeting minerality.
Fine bubbles, plenty of pressure under the cork. A pleasure for all the senses.

1996 vintage. Last tasted 5.8.25 (9.5), 9.29.24 (9.5) and 8.2.24 (9.6). Decanted with some sed and tasted after an hour. Solid cork and fill. This was the worst showing of the last visits with less tannic structure and slightly more richness. Tasted a bit more like their "Au Paradis" offering. Not totally dissuaded from picking up another few bottles for enjoyment in the few 5 years or so tho. Three out of four bottles surveyed were fabulous and this wasn't a total swing and a miss. 07.18.25. — 5 months ago
