I’m not sure about their whole story of not liking the DOC standards for cava , so they broke off to create their own level of control and accreditation?? But it’s good for marketing I guess and makes a light, citrusy cava — 7 years ago

Had this a year ago at a tasting grabbed several bottle for the new year, one of my favorite Cava’s. Medium lemon straw color with tiny bubbles and soft mousse. Complex tangy aromas of fresh stone fruits and notes of blossom and honey. On the palate apple and pear flavors with a toasty nutty character, very dry. Excited to drink this producer. Almond croissant with a stewed fruit glaze on the nose. Palette is like you drank briney sea water then popped a jumbo marshmallow and some Fuji apple. Some aged manchego in there somewhere. Drinking quite well right now, nothing wham bam out of control about it but damn good. — 5 years ago
