Needs a touch of air.... yeasty bread dough, almond paste, ripe pear and vanilla bean. Creamy smooth mouthfeel with appreciable weight, fruit is concentrated, like pear jelly-bellies, with nutty secondary flavors. Lees aging adds complexity. Smooth to finish with zest and firm acid.
