Pale lemon color with aromas of ripe fruits, citrus, toasty vanilla and warm baking spice scents, aged in 35% new French oak. On the palate complex flavors of apricot, pineapple & lemon citrus, well balanced with acidity on a nice mouthfeel. Long finish ending with oak, mineral and citrus notes, will continue to age. A big Chardonnay. Pair this with a Striped Bass dressed in a puttanesca sauce topped with bitter watercress. — 9 months ago

Dark garnet colored with a slight brick colored meniscus on the edges. Dark fruit, cedar, black olives and leather on the nose. Bold tastes of black plums, figs, cherry cola, and licorice wrapped in silky tannins and perfect acidity. A great finish. Kudos to my friend Steve Reynolds for making such an unbelievably great wine. This wine is not showing any signs of letting up. A true heavyweight Cabernet at a great price. — 6 years ago

Light color, creamy, good acidity. High alcohol. Bouquet pineapple, sideways, saline, honey and tangerine. Taste, pineapple, oily, creamy, sour apple tartness and strong honey. Good balance when chilled once warmed it was more sweet. — 9 years ago

Here is the recipe. Try it sometime.
4-6 thick cut bone-in pork chops
- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger finely chopped (I triple this)
- 1 1/2 teaspoons of garlic finely chopped (again.
I double this)
- 3/4 cup of cilantro finely chopped (no stems)
- 1 tablespoon of sesame oil
