This is a classic example of a Col Fondo Prosecco - made in the classic Champagne method with second fermentation in the bottle and not disgorged - the lees remain in the bottle (fondo=lees). 100% Otrugo grapes Spumante col fondo wine from Piacenza in Val D’Arda valley. Very pale in color, 12% vol, great acidity. Soil low in nitrogen. Sand with seashell fragments.
