Popped and poured, enjoyed over the course of a few hours. The 2021 pours a straw color with medium viscosity. On the nose, the wine is developing with notes of yellow apple, peach, honeysuckle, squishy, pineapple, clove. On the palate, the wine is dry, but showing significant fruit. So much so that it almost gives the impression of being off-dry. Acid is medium. Confirming the notes from the nose where the honeysuckle note is crazy powerful. The finish is long and there’s a slightly oily texture. A great, young Chave Blanc with a very bright future. Drink now with patience to allow it to open and drink through 2046+. Bottle 05182

(It’s evening). Bright straw yellow. Pronounced nose. Blossom, peach, sweet yeastiness, gentle nuttiness, golden apples and pears, spicy chicken skin soup, sweet baking spices (vanilla, cinnamon). Deep and intense but round and broad, not piercing.
Dry, high acid, high alcohol, full, rounded body, hint of spritz, very saline, nice long finish. A bit austere. Couldn’t quite cope with brilllat savarin but great with the others.

Popped and poured from a half bottle; enjoyed over the course of an hour. The “Oeil de Perdrix” is made in the saignée method and pours a pale copper/pink color with a persistent mousse. On the nose, the wine is developing with notes of strawberry, raspberry, pink pepper, lemon, and chalky minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. 2007: The nose doesn't prepare you for the lovely cotton candy sweetness on the palate. A very pleasant wine with medium weight and a nice uplift of sweetness toward end, yet with a good acidic cut to keep things in check. Would like to have again. — 10 years ago
