Appearance: Clear, Deep red-violet
Nose: Clean, pronounced blackberry, black cherry, plum, strawberry, sweet oak, and mineral.
Palate: Dry, medium-plus acidity and tannin, full body. Flavors of blackberry, black cherry, black currant, blueberry pie, plum skins, black raspberry, minerality, most appropriate oak in the background and on the finish. Long finish.
Conclusion: Very good.
Commentary: Winner Winner Chicken Dinner. Big round multifaceted dark juicy fruits (plush), fruit forward without being jammy, excellent mouthfeel (grip). Very enjoyable now, and could age 3 years. Make it a multi-bottle purchase.

Appearance: clear clarity, medium intensity, garnet. Nose: clean condition, medium intensity, aroma - cigar, black berry, fruitcake, stewed prune. Palate: dry, high acidity, medium (+) chalky tannin, flavour - dark cherry, chocolate, smoky, long finish. Conclusion, very good and approachable cab-sauv, great value for its price tag ($33), alcohol and flavour greatly integrated. — 13 years ago
Roussette de Savoie 2011 "Altesse" Domaine Pasquier
Nous annonçons officiellement la saison de la raclette 2014/2015 ouverte ! Ben quoi ? Si nous le faisons pas, qui va le faire ? Personne !
Avec de la raclette on boit quoi ? De la Roussette de Savoie ! Je vous vois déjà venir, la Roussette (cépage aussi appelé Altesse), ouais, bof. On va compter jusqu'à 3 et à 3, vous aurez oubliez tout ce que vous avez déjà goûté en Roussette, et vous pénètrerez dans un nouvel univers gustatif, olfactif (et pif et paf), attention : 1, 2...3 !
Pour commencer, il faut préciser que ce vin est réalisé dans les règles de l'art, de façon traditionnelle et non-interventionniste : vendangé à la main, avec une vinification sans intrant et sans aucun ajout de soufre (donc pas de mal de crâne à l'horizon), puis une année d'élevage en foudre et enfin on attend jusqu'à ce que le vin soit prêt à la vente (1 an).
La robe est claire, limpide, le nez s'ouvre pleinement en offrant une large palette aromatique où se mélangent fleurs blanches, miel et pâte de fruit, sur de légères notes agrumées.
La bouche : délicate et fleurie (aussi), elle s'inscrit parfaitement dans la continuité du nez et offre une belle acidité, sur la craie, avec une longueur tout en gourmandise (coing, fruits secs). La maîtrise est bluffante et le rendu impeccable ;)
Conclusion : un vin superbe, très près de l'exceptionnel qui fonctionnera parfaitement lors d'un apéritif plutôt marin (tartare d'algues, anchois, sardines) ou sur un poisson de lac. Bien évidement, c'est sur la raclette qu'il prendra toute son aise, c'est même délicieux.
Acheté 12 euros à la P´tite cave, boulevard de l'hôpital dans le 13e arrondissement, métro Gobelin.

2012 "l'Original" Macabeu
Sight: Clear, light amber.
Nose: Clean, dried apricots, golden fruits, honey, wet stone, dried grass. Beautiful fall wine.
Palate: Dry, medium plus acidity, full body. Flavors of dried apricots and golden fruits, dried grass, baking spices, seasoned oak. Long finish.
Conclusion: Outstanding wine for $21.99. — 12 years ago
Appearance: clear, pale, lemon; Nose: clean, medium intensity, capsicum, green beans, lime, smoke; Palate: dry, high acidity, medium-bodied, lime, powerful but smooth smokiness which creates medium (+) finish. Conclusion: good, great example of Pouilly Fume produced in Loire. Signature smokiness is not overpowering, yet integrates with the acidity and alcohol very well. One reason why it wasn't very good is the fact that it shows inferior existence of other flavours on the palate. — 13 years ago

Nose: dark dried fruits a la plums, raisins, and dark cherries, pungent oloroso sherry molasses-esque sweetness, spiced honey and toasted caramel. Quite sharp at the cask strength 60.1%. A bit of water cuts the numbing sharpness, and brings out the dark fruit and honey elements as well as the musty (in a good way) oloroso sherry notes. A very distinct orange ginger coffee cake aroma emerged with the addition of water as well.
Mouthfeel/body: very full and silky, viscous. Good tingle at cask strength. Not quite as viscous after the addition of water (obviously), but maintains its body and silky character.
Palate: More dark cherries, raisins, spiced dried fruit, cinnamon, more pungent molasses oloroso notes. A bit of water cuts the numbing sharpness of the cask strength alcohol volume and opens up the dark dried fruits notes and pungent sherry notes, as well as more spice.
Conclusion: Great whisky with plenty complexity and character for the price. Tastes a bit young and spirit-y at cask strength but since I typically cut it with a tiny splash of water, this hasn't been much of an issue. — 11 years ago
