This grower Champagne from Paul Dethune opens with pretty, almost coquettish aromas of alpine strawberry, cherry crumble, roses and the merest hint of earth. And while the Pinot stands out—it should it's 80% Pinot Noir and 20% Chardonnay—prolific bubbles lead into an unexpectedly intense, tensile acid spine that arcs and releases into chalky repose.
