(It’s evening). Bright straw yellow. Pronounced nose. Blossom, peach, sweet yeastiness, gentle nuttiness, golden apples and pears, spicy chicken skin soup, sweet baking spices (vanilla, cinnamon). Deep and intense but round and broad, not piercing.
Dry, high acid, high alcohol, full, rounded body, hint of spritz, very saline, nice long finish. A bit austere. Couldn’t quite cope with brilllat savarin but great with the others.

Aromas of wood freshly cut via table or circular saw, caramelized sugar and radial tire - things were looking up. Initial glass was a bit short, which I must say was disappointing after such an auspicious beginning. After a bit of time, she broadened out into an elegant, almost weightless drink. So delicate and pleasant.

Graceful hands present themselves down unto the crust of soil. Pressing each finger softly on the lush red fuzz of the Strawberry. Its touch is both warm and comforting to her. This superb wine is my first Savignin from Côtes-du-jura. It has a fine pale golden hue which exudes fine notes of lemon, apple blossom and a hint of walnuts. Round and generous with wonderful acidity, I’m sure this wine will cellar really well and be equally enjoyable after several years of aging. We elected to pair this beauty with a hot smoked salmon, asparagus-ribbons, and capers in a lemon zest, creme-fraiche sauce accompanying a delicate angel hair pasta.
