this is a pinot noir. it’s smokey yet light. the black cherry flavors set in as an after taste. i paired with the spicy cavatelli and maitake mushrooms at margot. the pairing made the wine even better. — 2 years ago

To celebrate we’re raising a glass with the Oudiette x Filles ‘Les Sablonnières’ Blanc de Noirs, Extra Brut Champagne (NV).🥂🥂
This is a small batch, third-generation woman-owned and -run estate with vigneronne Margot Laurent at the helm (in terms of winemaking) arm-in-arm 💪🏻 with her sister Charlotte and their mother Florence.
It’s made with 100% pinot noir 🍇 , including pinot noir droit (a small-berried Pinot Noir clone), and aged 36 mos, lending complexity and richness. Aging well beyond the minimum requirements for a non-vintage Champagne. 🕰️
A majority of the primary fermentation occurred in Burgundy oak barrels, subject to ten months aging (élevage) in the same oak barrels, also undergoing bâtonnage.
Oudiette x Filles practices organic farming in its vineyards south of Épernay near the village of Beaunay in the northern part of the Côte des Blancs.
In appearance this wine is pale gold with a fine-beaded and persistent mousse. Aromas and flavors include just-ripe green pear, lemon curd, apple, starfruit, citrus blossom, brioche, almond paste, marzipan, toast, biscuit. The palate is dry with a rich and creamy mouthfeel balanced by vibrantly high-toned fruit and a long, elegant finish. It’s absolutely delicious. — 2 years ago

Hints of New Zealand on the nose with grapefruit and grass. A really rich body for a Sauv Blanc! Ripe grapefruit on the palate, almost candied or with a little sugar sprinkled on. Still the tart acidity you'd expect. — 9 months ago

Definitely, shows the fruit of 22. Lighter style extraction. A nice pair with Petit Filet Mignon with Glazed Cipollini onions and Red Peppers drizzled in a light gravy.
Bright, ripe and floral fruits of; blackberries, dark cherries, baked strawberries, raspberries, hints of blueberries, some pomegranate, really nice, soft, spice, light baking spices-clove, nutmeg, cinnamon & vanillin, dark, rich, turned earth, a touch of tree bark with sap, just a touch of eucalyptus,dry top soil, red & purple flowers, round acidity, not overly complex but drinks very easy with a nice, balanced finish that lasts under a minute and falls on light spice & dry top soil.
Also, finished nicely with a bite of flourless chocolate cake w/ raspberries.
