First Sauternes! Seriously intense stuff. Paired with a nice stinky, salty Roquefort and some Serrano ham and the pairing was out of this world, particularly with the Roquefort; with the cheese it was a study in extremes, for sure. The richness of both just came together in such harmony. The wine was intensely honeyed, with sweet white peach fruit and candied ginger as well. Alone, it was definitely cloying (which is why I'm not scoring higher; if I was rating the pairing it'd be near perfect) but with the cheese it was a great counterbalance. Full bodied and richly textured. I wouldn't describe it as *flabby* since it wasn't lacking acid; rather it was just so sweet that the acid still didn't quite counterbalance the RS as much as I would like. A smack in the face with richness and certainly some territory I look forward to exploring further. — 9 years ago
I found this a little too easy to drink :)

Benesin Tobala Mezcal. Double distilled. Nom 036X. San Juan del Rio, Oaxaca. Light smoke and citrus. Mouth coating. Just wow! Paired with 18 month Serrano ham. — 9 years ago
The often-sharp edges of a younger Cabernet Franc have been softened by time, and yet, this wine still has solid structure. Smooth and delicious. It was INCREDIBLE with a salt-and-pepper crusted, grilled ribeye steak, roasted fingerling potatoes, and broccoli with garlic and slivered Serrano chilies. — 9 years ago
'12 vintage.
Pale straw color for this SB. Green nose on the herbal side, habanero and Serrano pepper but there a resonating guyaba/passion fruit that is quite sexy. I love the tension the acidity brings on the palate and it tightens your tongue and unleashes a vibrancy that is quite unique. I must admit that I have never had such a SB. It's not mineral nor chalky, not opulent or viscous. Barrique, like SE red is absolutely perfectly controlled. It's here, but it's not. A beautiful wine. #sauvignonblanc #screamingeagle — 10 years ago
We had this with pate. They also suggested Serrano ham. I think it would be good with desserts too. — 11 years ago
