Volatile number, with a nuclear mousse; big whipped cocoa pudding top pumping up like a volcanic island. Zero lacing, despite marathon persistence. Herbal jasmine and lavender in chocolate with black pepper scents. Orange peel, Cuba libre, ginger, and Old Spice-allspice. Finesse mouthfeel turns beef Bourgogne iron skillet de glace. There is a soy sauced tofu element, complete with green onion and black mushrooms. Not at all what I imagined, yeasty-malty salty-sluice-y and a real anomaly. This damned hairy ape! Really enjoyed the bottle. It was crisp and drier than I expected — 8 years ago
Very sweet! But I guess it is a honey mead! Lots of strong current taste, with a hint of other berries! Would definitely buy again as a dessert wine! — 8 years ago
Big dry flavor with very nice, big black cherry vanilla finish. Go go idaho! — 9 years ago
Amazing deep dark berry intensity with a stunningly long palate and Sauternes style layered complexity. Like nothing I’ve had before. — 5 years ago
Choke cherry mead. Such an amazing blend of tart and sweet. — 6 years ago
Purchased on a recent trip to Idaho. Aromas are true to an old world sangiovese. On the palate, it is more of a new world approach to sangiovese vs chianti. Black cherry, and leather flavors that matched with nice smooth tannins. Love to try these local small wineries. This hangs right there with most young chianti. — 6 years ago
24% Cab Sauv, 44% Merlot, 32% Malbec. 2016 “Valentina”. A very balanced wine. Some dark cherry and vanilla on the nose with the winemaker’s note of “black tea” holding true. Nice body to it. Subtle tannins with a smooth lingering finish. Hooray Idaho! — 7 years ago
Batch #1/288. Strong passion fruit, honeysuckle nose. Sweet, pure palate. — 8 years ago
The flagship wine from Burn Cottage, a Central Otago, New Zealand producer focused on Pinot Noir. Husband and wife owners Dianne & Marquis Sauvage sought out Ted Lemon of Littorai, and SF Chronicle's winemaker of the year for 2010 (Jon Bonné: "The simple version of Ted Lemon's story: Young American goes to Burgundy. Becomes first American to run a Burgundian wine estate. Comes back and stays true to Pinot's motherland."). Lemon oversaw the planting of the vineyards, along with all aspects of vineyard management and winemaking, chief of which being Biodynamic from inception. The label is a derivative of a 1795 fairy tale called “The Green Snake and the Beautiful Lily” which represents the ideal intersection of people and the land reflected in Biodynamics. Black cherry, citrus, and lavender pastille, with some secondary loam and herbs. — 8 years ago

Surprising berry zing — 6 years ago
Brown-black with a root beer head, jungle-banyan lacing. Big whiskey barrel whiff on approach, showing vanilla caramel and heaps of coffee after. Stunner. There is a date bread and chocolate pie combo as well as dark nibs and rich ganache informing the malty mocha. Licorice extract, Madagascar vanilla with extract heat, clove and nutmeg energies, darkest caramel bordering on burnt. Raisin-date-fig ground up with brown sugar and exhibiting an almost pine bite. Cinnamon stick dryness to the finish, but still resonating with a resinous danger. This snake bites you and you know it. — 6 years ago
Refreshing and complex. Wild flowers, honey, blueberry and lemon oil. Batch # 1/107 — 8 years ago
