Black bear body with blonde grizzlies piled high, atop. Licorice, espresso bean, toffee, dark chocolate, burnt honey, dried violets, dried black cherries and rich malt aromas. Sarsaparilla taste, with dark, sweet coffee, dark chocolate, baked raisin, dried black cherry, dried black currant and licorice. Stupendously supple integration of all elements! The bitter bits are a perfect counterbalance. .

Black with burnt umber highlights. Low and creamy head springs with bubbles combining to undercut its great form. Fireworks lacing slow falls to leopard spots. Espresso and baker’s chocolate nose boasts licorice and chicory, campfire notes and vanilla. Palate shows none of the sweet elements of the nose initially. Instead, pipe tobacco and unsweetened bitter chocolate, the chicory and burnt toast prevail; a burnt tips taste lingering. Baked pecan, dark caramel, black pepper, and ethiopean coffee, with black chewing tobacco and vanilla bean complete the circuit. Power and restraint, in this lovely offering. Soapy breastmilk and citrus rising on yeast, grapefruit pith peeled thinly, clover rolls just browning, and leather fringes. Lively mouthfeel as expected. Lime pith and grapefruit with papery ginger slices, orange zest, magnolia, carrot bread, straw, zucchini spirals, ginseng, and banana peel. Complex rusticity. .

Red gold body with a Matisse sketched white ring and merengue peaked, sheet-lacing. Clean citrus nose exhibiting clementine and dried pineapple, Meyer lemon and a faint funky-persimmon and lotus. There is something pleasant about the naturalness of the aromatics here with dried lemon verbena and Calloway seed. Orange and tangerine eclipse the lemon on the palate and add sweet grapefruit, and a clove note that tightly binds the whole. The bitterness being mitigated by the maple was brilliant here! Makes the Dogfish 90 seem clunky in comparison. I am a fan of this manifestation. Careful crafting and a simple solution to tune aggressive hops. There is no maple flavor btw. .

Perfect sheet of fog lacing falls like a slo-mo curtain to reveal layer two of mountain snows reflecting moonlight. Nose of bananas foster in all its blazing brandy and it’s caramelized olfactory topography; a malt image in sensory sepia to match the mountainscape. Nutmeg, cola and pecan dessert vies with baklava. The palate is a revelation in balance.
