Active peach-gold and inscrutably, near opaque, with an arrogantly vaulted, whited foam tower, unblemished by human tears; clinging lacing like dish soap suds, tear raggedly to silhouettes of prehistoric headbutts. Soapy breastmilk and citrus rising on yeast, grapefruit pith peeled thinly, clover rolls just browning, and leather fringes. Lively mouthfeel as expected. Lime pith and grapefruit with papery ginger slices, orange zest, magnolia, carrot bread, straw, zucchini spirals, ginseng, and banana peel. Complex rusticity. .

All the essentials. Hope these monks blessed the devil out of this! Gorgeous auburn brown that looks as rich as fresh tilled, valley loam. This head don’t quit! Cappuccino foam with variations. Sheeted micro-weave of bubbles in the lacing that part like thick lips, as if to say, ‘ahhh.’ A touch of baked marshmallow-on-yam. Coffee rye, barley grist, malt and grilled meat interplay, twice baked potatoes with bacon, sour cream and chives. Caramel drizzle. Dark honey glazed sourdough toast. Blood orange squeezed onto fondue, baked, mushroom stuffed persimmon. Heady, rustic, decadent nose invites us to a feast. Intense finesse! So multi-layered they had to fold it into the bottle! There is a cognac barrel aspect that has a cedar and oregano intertwined in an aged balsamic depth. Bark-y and chicory but also resembling petite verdot in its unctuous and integral core. Cherrywood and rich, dark maduro tobacco. The list could literally go on forever. Red gold body with a Matisse sketched white ring and merengue peaked, sheet-lacing. Clean citrus nose exhibiting clementine and dried pineapple, Meyer lemon and a faint funky-persimmon and lotus. There is something pleasant about the naturalness of the aromatics here with dried lemon verbena and Calloway seed. Orange and tangerine eclipse the lemon on the palate and add sweet grapefruit, and a clove note that tightly binds the whole. The bitterness being mitigated by the maple was brilliant here! Makes the Dogfish 90 seem clunky in comparison. I am a fan of this manifestation. Careful crafting and a simple solution to tune aggressive hops. There is no maple flavor btw. .

Hard poured this inky octopus to a pattern-bald, latte-afro pate with dancing nematode swirls in space riffs. Sticky cellulite ‘lacing’ painting the glass with stain-stars. Black. Burnt baklava aromas, maple char, black chocolates with windowsill mint, malty dark caramel, baked aromas. Coffee and resinous chocolate, baked maple syrup, poppy torts, rye bread with dark caramel, baked chocolate with ganache for a sleepover, Thai coffee reduction, treacle, a sweet black pepper and sassafras and dark rum sprouting fresh vanilla bean. Intensely variegated, layered, concentrated. The Dagwood of imperial stouts. Piled 6 feet high, enjoy with a friend, horizontally. .

Hard pour if you’ve a desire to to see a head of coffee foam in dark cappuccino. It loiters a little with unctuous lacing that stick in place in globules, sporadically spaced. Dark chocolate scented, where brew, and coffee bean mix with toffee and sweet cedar, vanilla bean and nougat. Chocolate-pecan-caramel turtles amp up with mocha and espresso, a tiny pinch of black pepper, dark tobaccos, bakers chocolate, and brown sugar coated malt chocolate. Sweet initially, then revelatory as it sorts its relationships, then bitter, with pine, acanthus, chicory, walnut and pecan shell. Warm, rich, and covered in monster muck. Like a cigar smoke filled station wagon driven by a dark chocolate Santa after an Italian truck stop espresso run being slowly pulled into a tar pit. One for the ages.
