Exactly what I wanted, top shelf, beautiful apple floral, fruit, bark… a lot was captured in the distilling.
Nose,: Large, bright, clean, fresh apple, sweet cider, apple tree bark, rocks, soil.
Palette: Palette cleansing alcohol, followed with notes of fresh cider Apples, apple wood and oak, back palette predominate.
Medium finish
Used for in onions with light crushed anise seed for Moroccan spiced brisket, Apple & Honey Sangria, apples & date stuffed challah, as well as enjoyed on its own.

Not so clear in terms of composition, blind tasting says it is not typical Sangiovese.
Example of organic wine before it became a mainstream. Very good balance of berries and seems like it was aging in oak 3 years. “I make Sangiovese, the rest are making coke” popular saying of the wine maker 😊 — 7 years ago
Insane Calvados from the best in Normandy coming from a blend of 25-30 year old brandy. Toffee, baked apple, almond, citrus fruit, tropical fruit that has you wanting more. Such a complex spirit. — 9 years ago
