Hint of fresh herbs on the medium-plus finish. Mouth watering acidity and excellent balance. Pleasant mouthfeel and aftertaste. So flavorful, bold and well crafted. I think if you read this nonsense I post, you know how I feel about this producer, past & present. This 07 is outstanding & top of its bell curve. It is so good to revisit these great vintages of Caymus Classic.

This is fresher than the 97. It is rich/lush, cassis to currents, ripe, blackberries, black raspberries, black plum, raspberries & strawberries. Dark chocolate, mocha, classic, beautiful, Caymus Classic spice that I miss dearly in their new wines, black licorice, fudge, clove, cinnamon, nutmeg & vanillin, most top soil, limestone, dry herbs, dry tobacco, barrel shavings, taut leather, volcanic grey clay, dark, fresh & slightly withering flowers, violets, beautiful round acidity, balance, structure, nice tension and elegant finish that last minutes and falls on spice and evoluted earth tones.

This bottle is in fine shape. Still strong and will last another 10 years of fine drinking. Phenomenal vintage and time to enjoy. — 4 months ago

Beautiful and light on its feet. Dry - very well made! Fantastic fruit. Very fresh. Honey. Meyer lemon, mandarine, just a faint touch of 1,1,6-trimethyl-1,2-dihydronaphthalene (TDN) aka Diesel. Presented double-blind. The wine pours a light straw color with medium viscosity and no signs of particles or gas. On the nose, the wine is developing with tart and ripe notes of apple, pear, underripe pineapple, lemon curd, nuts and minerals. I felt like there was some deft use of oak. On the palate, the wine is dry with medium+, bordering on high acid. Confirming the notes from the nose. The finish is long and chocked full of minerals. My immediate impression was Bourgogne Blanc and I was having a hard time getting away from it. So I called Chardonnay, from France, Burgundy, Chassagne-Montrachet with 3-5 years of age. Gosh dammit! Margaret River strikes again!!! Blind, I always seem to call these Chablis or some other high quality white Burg. And I adore the Leeuwin Estate Art Series Chardonnays. They always impress me. Tempranillo and 4% Graciano. 24 m barrel aging and 12 m aging in bottle before it comes on the market. Elegance and structure. Vanilla and spicyness in smell. Also mocca.
