Used the Durand on the cork - soaked to the edge. Decanted for 2 hours.
This wine had some gaminess. Smooth. Fruit was a bit wild and overpowered by the savory flavors.
Paired well with the chicken skewers and onions. Needed complex flavors in the food to pair well.

Previous bottle tasted a year ago in September 2024. Mid lemon in colour. Aromatics of struck match, white flowers, lemon and sea spray. Hasn’t got the delicious ripe fruit I am used to with Australian Chardonnay but it does have its charm and attraction in a more mineral restrained style. — 9 months ago

This has just started to shift from fresh to aging.

We had the 2012 and it was fabulous. All the purity and grace of grand cru Chardonnay, with elegant depth from the honey and nut overtones that age brings. This was a wonderful experience. (Pro tip: Please don’t drink it too cold: you’ll miss so many of the flavors!) — 9 months ago

Firstly the nose is driven by strong Sherry notes. Gets better & more harmonious with air. The Sherry turns into curry plant, fennel blended with hints of apricot & yellow stone fruit. Like a laser beam on the palate, very salty, vibrating and grasping. Long finish. — 9 years ago

Dark ruby in color with a wide reddish rim.
Beautiful nose of red fruits with earth, light wood, coffee, spices, dark chocolates and peppercorn.
Medium bodied with medium acidity.
Dry on the palate with black currants, plums, cooked cherries, spices, chocolates, light oak and licorice.
Long finish with fine grained tannins and tangy cherries.
This 8 year old GSM blend from Châteauneuf-du-Pape is delicious now. Complex, well balanced and entertaining. Elegant and fruit forward.
I had the 2020 vintage not too long ago, and this one drinks so much better.
Will continue to age nicely in the next 5 to 7 years.
