An evolution worth waiting out, as I initially thought it was over the hill. Starts musty, then mushrooms, ... after a few hours its youth comes back. Color still vibrant. Fruit mature and leaning toward fig, chocolate, and earth. ... the good part of the downside of a bell curve.
