Cellar temp is where this shows best. Slightly oxidative, this shows round edges & mineral complexity on open, but as it breathes it takes on a wonderful elemental/earthy/umami character on both nose and palate. Versatile as they come. It would be a companion for most fish & fowl on the table, but ideal for a cheese board as well.

Booming mouthfeel. Super oxidized but develops into a creamy Appliness. Like palo cortado. A little zing. Great weight. Superb next to the olive oil she makes with some rustic Italian bread.
