Very original. 100% Cabernet Sauvignon 2001 with 13 YEARS in sur lie. Lots of tropical fruit: pineapple, passion fruit; stone fruit: ripe peach; notes of ripe cherry, Granny Smith Apple, intense creamy mousse and creaminess. A delicate perlage and acidity with medium finish. Slightly sweet aftertaste. You can't compare it with a Pinot Noir or any another grape with traditional method. Normally in USA they tend to do the opposite for reds (judge Pinot noirs as cabs - big mistake). In this case (bubbles) is the reverse.
