Session 3 of Wine Essentials One at the Institute of Culinary Education Center for Wine Studies.

This is a young Chianti Classico, with a bright fresh color and a smaller waterline breakdown. It smells pleasant, with a bouquet of soy sauce (slight umami), plum, cherry, and vegetables. That said, this isn’t direct in character and has a rather neutral nose. Nevertheless, this wine has a good balance of acidity and tannins. On the palate are sour red fruits, berries and plum. This savory Chianti would be a perfect match to tomato sauce.
