The 2018 Organic is 51% Sauvignon Blanc and 49% Sémillon.

The nose reveals; lemon, lime, grapefruit, pineapple, white peach, underripe green melon, green apple skin, touch of cream & vanilla, honeysuckle, soft chalky powder, light presence of volcanic minerals, yellow and spring flowers.

The body is thick and waxy. Lemon, lime, grapefruit, pineapple, white peach, underripe green melon, green apple skin, touch of cream & vanilla, honeysuckle, soft chalky powder, the presence of volcanic minerals deepens on the palate as it sets, yellow and spring flowers. It’s mostly a soft, delicate wine with the exception of the minerality but, it’s not too much. The acidity is splendid and the finish is soft, elegant and gently polished.
