This has depth & complexity way beyond my expectations. Very fine mousse, withy tiny, persistent bubbles. Fresh nose with hazelnut, some green walnut and freshly cut apples. Great precision on the palate, not very rich but still with good breadth, fresh apples and a streak of lemon juice balancing everything beautifully. Hazelnuts and apple tart. Amazing length. This is elegant, complex and bordering on profound.
