Infanticide can be delicious. The early onset of winter in Seattle called for a big wine for pappardelle alla bolognese. Decanted 2+ hours and served at cellar temp. Initially a bit of a mess--wood, tannins, heat--started to come together after the first glass. Classic nebbiolo notes of dusty cherries, foliage, pepper. Big and beautiful, not quite in prime form. And yet, je ne regrette rien... 🍷💯👌🏼🍝
